This course provides information about Child and Adult Care Food Program (CACFP) special diet requests and menus
ensuring that individuals with disability and non-disability dietary restrictions or health concerns
receive proper nutrition in care settings. This
approach not only promotes civil rights, inclusivity and
nutrition but also complies with federal regulations to
accommodate special dietary needs.
Learning Objectives:
• The participant will be able to explain the “who,
what, when, where, and why” special diets are
required to operate the CACFP or SFSP.
• The participant will use scenarios and special
diet decision trees to evaluate special diet
requests.
• The participant will review the steps of an
effective special diet program to implement
and/or improve their own program.
